Method
- Weigh out 3 oz OSD and 12.2 oz WBS into a large, high-temp rated bag.
- Add 1/4 tsp sugar to the dry mix.
- Pour in 15 oz water and mix thoroughly so the OSD and WBS are evenly hydrated and there is still some free water in the bag.
- Vacuum-seal the bag for about 10 seconds while free water is still visible. The bag is large enough to handle a 10-second seal โ possibly a little longer; you can try 12 seconds next time if the seal looks solid.
- Place the sealed bag into a sous-vide bath and hold it at your desired conditioning temperature for the planned time.
- After the sous-vide step, allow the bag to cool enough to handle safely.
- Run your usual sterilization cycle (e.g., pressure sterilizer/autoclave), using your standard time and temperature for grain spawn.
- Let the bag cool completely to room/inoculation temperature, then inoculate under clean conditions according to your normal workflow.

The purpose of the sous-vide step prior to sterilization is twofold:
- To hydrate the grain/OSD, serving as a substitute for the traditional overnight soak.
- To lightly sanitize the grain before the full sterilization process.
